Ingredients:
• 1 cup – Chicken pieces, approx 1/4 inch
• 1/2 cup – chopped Onion
• 1/4 cup – chopped Capsicum
• 1/4 cup – chopped French beans
• 1/4 tsp – black pepper
• Salt as per taste
• 1 cup – grated cheese
• 1 tsp – Red Chilli powder
• 1 – green chillies, chopped finely
• 1 – Garlic crushed
• 4 – Corn tortillas (6 inches in diameter)
• 1 tbsp – Butter
• 4 tsp – salsa sauce
• 2 tbsp – oil
Method:
- Heat a pan with 1 tbsp of butter.
- Add chicken pieces and cook till light brown, stirring continuously.
- Add onion, capsicum and French beans.
- Add pepper, salt, chilli powder and garlic.
- Cook chicken till brown. Remove from fire.
- Cut the tortillas into half.
- Spread the mixture evenly on four parts.
- Top it with salsa sauce (1 tsp each on each tortilla).
- Finally, garnish with grated cheese in 4 equal parts.
- Cover it with remaining tortilla halves.
- Heat a skillet with 2 tbsp oil.
- Put the tortilla sandwich on it.
- Let it shallow fry till golden brown.
- Turn and let the other side becomes golden and the cheese is melted.
- Serve with your choice of dip.
