Ingredients:
• 100g – red Pumpkin
• 100g – Sweet Potato
• 100g – Potato
• 100 g – Ash gourd
• 100g – Yam
• 100g – string beans ( karamani, barbathi )
• 100g – Gherkins ( kovakkai, tondli)
• 1 – coconut, large
• 2 tbsp – Rice flour
• 6-8 – Green chillies
• 1/2 tsp – Asafoetida
• Salt, to taste
Method:
- Peel and cut pumpkin, sweet potato, potato, ash gourd, yam into thin and long pieces like finger chips.
- Cut beans into 2 inch long pieces. Cut gherkins into quarters, lengthwise.
- Grate the coconut and extract 1 cup first milk and 3 cups of second milk.
- Slit the green chillies.
- Combine all the vegetables and chillies with the second coconut extract. Simmer till the vegetables are cooked.
- Add salt, and rice flour, mixed with 1/2 cup of water. Simmer for 2-3 minutes. Add the first extract of coconut and asafoetida.
- Just as it begins to boil, remove from fire. Serve with steamed rice.
