Ingredients:

• 1.5 cups – brown, Rice flour
• 1/2 cup – Almond powder
• 1/2 cup – all-purpose flour
• 1 cup – silken Tofu
• 3/4 cup – Sugar
• 1 tsp – baking powder
• 1/2 tsp – baking soda
• 1/4 cup – dark chocolate powder
• 1/2 cup – dry fruits: raisins, dates, Apricots and Cranberries
• 2 tbsp – Canola Oil

Method:

  1. Preheat the oven to 350 degree F and line a baking sheet over a baking tray
  2. Grind the sugar to a fine powder, add the silken tofu and oil to the powdered sugar and mix to form a paste. Transfer this paste into a bowl, meanwhile mix the brown rice flour, almond powder, all-purpose flour, baking powder, baking soda, chocolate powder, dry fruits in an another bowl and add gradually the dry ingredients to the sugar-tofu paste, turn everything as a soft and slightly sticky dough with a wooden spatula, don’t over mix
  3. Shape small balls of cookies dough and arrange them over the lined baking sheet
  4. Before baking, just press the uncooked cookies with a fork and bake them in middle rack for 20-25minutes
