Ingredients:
• 1/2 cup – almonds, ground
• 1/2 cup – parboiled brown rice, soaked
• 1 cup – water
• 1/2 cup – grated Coconut palm Sugar
• A few – walnuts, chopped
• A few Raisins
• 1/8 tsp – Cardamom powder
• A few – strands of Saffron
Method:
- Wash and pressure cook the soaked parboiled rice with 1.5 cups water for 3 whistles. Ratio is 1 rice: 3 water
- Let the pressure go off, remove the lid and just mash it a bit.
- Grind the almonds with 1 cup of water to smooth milk
- Pour it in the rice and continue to cook for 5 mins. Keep stirring
- Add the cardamom powder
- Crush the saffron strands and add to the rice
- Add grated palm sugar and let cook for another 5 to 7 mins, keep stirring, take care not to burn the kheer.
- Heat almond oil in a pan, fry the walnuts and raisins and garnish.
