Ingredients:

• 1 cup – Tamarind extract
• 10 – Shallots
• A few – Garlic Cloves
• 1 tbsp – Fenugreek seed
• 1/2 tsp – mustard
• 1/2 tsp – Urad Dal
• A few – Curry leaves
• 1/4 cup – gingili oil
• Salt to taste
• To roast and grind:
• 1 – dry Ginger
• 3 tbsp – Coriander seeds
• 15 – Black Peppercorns
• 1 tsp – Cumin seeds

Method:

  1. Dry roast and grind all the ingredients to a fine powder.
  2. Heat gingili oil in a heavy bottomed pan, add the mustard seed and urad dal, let it splutter.
  3. Add the fenugreek seeds, fry it.
  4. Add the shallot pieces, curry leaves and garlic pods to the oil, fry well.
  5. Add the prepared spice powder and salt to tamarind extract and mix well.
  6. Add it to the cooking vegetables, cook them for 20 to 25 mins in medium flame with the lid
  7. Once the oil separates from the kuzhambu remove from stove.
  8. Serve hot.
