Ingredients:
• 2 cups – Watermelon juice
• 1 kg – Mutton
• 2 tsp – ginger-garlic paste
• 4 tbsp – oil
• 2 tbsp – coriander powder
• 2 tsp – Jeera powder
• 1 tsp – Haldi powder
• 1 tsp or less – Red Chilli powder
• 1 cup – fried Onion paste
• 2 tbsp – Tomato puree
• Salt to taste
Method:
- Heat half the quantity of oil and put the mutton pieces and salt to taste.
- Allow the mutton to dry up so that all the water in the mutton is absorbed into the mutton.
- Lower the heat and mix in the ginger- garlic paste.
- Stir gently and mix in salt to taste.
- Now, mix in the fried onion paste and stir fry for another 2 mins.
- Mix in the tomato puree and all the spices.
- Stir fry for 2-3 mins more.
- Add the melon juice and the remaining oil and continue to cook on low fire so that the melon juice is absorbed in the mutton.
- Cover with a lid while doing so that the mutton pieces become tender.
- In case the mutton is still undercooked, place in a pressure cooker with 1 and half cups of water and cook for the mutton to become tender. Check for the salt.
- Garnish with watermelon pieces and serve with rotis.
