Ingredients:

• 2 cups – Watermelon white rinds (chopped)
• 1 cup – Toor Dal
• 1 – Onion (chopped)
• 1 – Tomato (chopped)
• 1 tsp – coriander powder
• 1 tsp – sambar powder
• 1/4 tsp – Turmeric powder
• 1/2 tsp – Garam Masala powder
• 1 tsp – Mustard Seeds
• 1 tsp – Urad Dal
• 2 – dry Red Chillies
• 1 – Cinnamon stick
• salt to taste
• oil for frying
• a few Curry leaves
• To grind: 1 tsp – Fennel seeds
• 2 tbsp – grated Coconut

Method:

  1. Grind the fennel seeds and grated coconut into a fine paste.
  2. In the meantime, pressure-cook the toor dal with turmeric powder and keep aside.
  3. Heat enough oil in another pressure cooker and fry the mustard seeds, urad dal, dry red chillies and cinnamon stick.
  4. Add the chopped onion, curry leaves and chopped tomato immediately and saute until the vegetables turn mushy.
  5. Add the chopped watermelon pieces and saute for a few minutes.
  6. Add the cooked dal along with coriander powder, sambar powder, garam masala powder and salt and bring to boil.
  7. Add the paste, cover and cook until the vegetables are done well.
  8. Serve hot with rice.
