Ingredients:

• 2.25 cups – flour
• 3/4 cup – shortening
• 1.5 cups – Sugar
• 1 cup – skimmed Milk
• 5 – eggs
• 1.5 tsp – vanilla essence
• 3 tsps – baking powder
• 1 tsp – salt

Method:

  1. Soften shortening by stirring.
  2. Gradually add sugar and cream till light and fluffy.
  3. Add vanilla essence.
  4. Sift flour with baking powder and salt and add to the creamed mixture alternately with milk.
  5. Beat after each addition.
  6. Separate egg whites and beat until stiff.
  7. Fold in stiffly beaten egg whites.
  8. Bake in paper lined round pans in moderate oven for 375 degrees F for 18-20 minutes.
