Ingredients:

• 4 cups – vegetable stock (refer below)
• 1/2 Onion ,chopped fine
• 1/4 tsp – Ginger paste
• 1/4 tsp – Garlic paste
• 1/4 tsp – cumin powder
• 2-3 pinches Turmeric powder
• 1 tsp – curry powder
• salt to taste
• 1/2 cup – frozen Corn
• 1/2 cup – tomatoes, chopped finely
• 1/4 cup – Tomato puree
• 2 tbsp – raw Rice
• 2 tbsp – moong dal (yellow)
• 1 tbsp – oil

Method:

  1. Heat oil in a pan.
  2. Fry onion, ginger and garlic till transparent.
  3. Add cumin powder, turmeric and curry powder.
  4. Add vegetable stock and bring it to boil.
  5. Add moong dal and let it cook for 2-3 minutes.
  6. Add rice, corn, tomatoes and puree.
  7. Let it cook till rice is done.
  8. Serve hot. Soup sticks, pepper and salt, as desired.
