Ingredients:
• 4 cups – vegetable stock (refer below)
• 1/2 Onion ,chopped fine
• 1/4 tsp – Ginger paste
• 1/4 tsp – Garlic paste
• 1/4 tsp – cumin powder
• 2-3 pinches Turmeric powder
• 1 tsp – curry powder
• salt to taste
• 1/2 cup – frozen Corn
• 1/2 cup – tomatoes, chopped finely
• 1/4 cup – Tomato puree
• 2 tbsp – raw Rice
• 2 tbsp – moong dal (yellow)
• 1 tbsp – oil
Method:
- Heat oil in a pan.
- Fry onion, ginger and garlic till transparent.
- Add cumin powder, turmeric and curry powder.
- Add vegetable stock and bring it to boil.
- Add moong dal and let it cook for 2-3 minutes.
- Add rice, corn, tomatoes and puree.
- Let it cook till rice is done.
- Serve hot. Soup sticks, pepper and salt, as desired.
