Ingredients:
• 1/2 kg – Zucchini (cut into medium pieces)
• 2 tbsp – cooking oil
• 1 – large Onion (sliced)
• 2 tsp – chilli powder
• 1 tsp – minced Garlic
• 1 tsp – coriander powder
• 1 tbsp – Vinegar
• 2 – large Tomatoes (chopped)
• Salt to taste
Method:
- Heat oil in a pan and add onion, green chillies and garlic and fry till the onions turn light brown.
- Add zucchini, tomatoes, chilli powder, coriander powder, salt and vinegar, and cook on low heat for about 10 minutes.
