Ingredients:

• 1.5 cups – all purpose flour
• 1 cup – powdered Sugar
• 1 tsp – baking soda
• 1/2 tsp – salt
• 3 tbsp – cocoa powder
• 1/3 cup – vegetable oil
• 1 tbsp – Vinegar
• 1 tsp – vanilla essence
• 1 cup – cold water

Method:

  1. Sift the dry ingredients in a large bowl and mix well to combine.
  2. In another bowl, mix the wet ingredients and stir well.
  3. Add the wet ingredients to dry, little by little, until lump free.
  4. Grease and flour a 7-inch diameter tin.
  5. Pour the mixture into the tin and drop the tin lightly on the counter to get rid of any bubbles in the mixture.
  6. Bake this in a preheated 360 degrees F oven for about 30 minutes or until the cake is springy to touch and a toothpick inserted in the centre comes out clean.
  7. You will also find the cake leaving the sides of the tin.
  8. Cool the cake by leaving it aside for 1 minute or so. Then invert the tin over a rack and tap it gently to unmould the cake.
  9. Cut it into slabs and sprinkle some powdered sugar on it.
