
Undhiyu is a famous Gujarati recipe made during winter and specially on Uttarayan. Undhiyu is a mixture of a different winter special vegetables like green beans (papdi), sweet potatoes, banana, yam, brinjal, methi and more. Undhiyu is made in whole Gujarati with different variations, but the surti style to make Undhiyu is different and gives it a more rich taste which is famous all over the Gujarat and other states. Different spices and herbs are used to make Undhiyu and cooked over LOW heat. Here is the complete recipe to make Surti Undhiyu.
Ingredients
– 150 gm surti papdi (green beans)
– 100 gm raw banana
– 100 gm yam (suran)
– 100 gm sweet potato
– 100 gm brinjals, cut into two part
– 1 tablespoon crushed garlic
– 5 tablespoon oil
– Salt to taste
– 5-6 green chilies
– 2 tablespoon chopped coriander leaves
– 1 tablespoon wheat flour
– 1/4 teaspoon asafoetida
– 1/2 teaspoon turmeric powder
– Lemon to taste
– 1 teaspoon ajwain
To Make Methi Muthiya
– 100 gm finely chopped methi leaves (fenugreek leaves)
– 1 cup gram flour (besan)
– 1 teaspoon red chili powder
– Salt to taste
– 1 tablespoon oil
– 1/2 teaspoon turmeric powder
– 1 teaspoon coriander powder
– Oil for deep frying
– 1 teaspoon sugar
To Make Undhiyu Masala
– 1 cup finely chopped coriander leaves
– 2 cup chopped garlic
– 1/2 teaspoon dry garlic paste
– 2 teaspoon sesame seeds
– 1 1/2 tablespoon green chili paste
– 1/2 teaspoon asafoetida
– 1 tablespoon dry coriander powder
– 2 tablespoon oil
How To Cook?
To Make Methi Muthiya
1. Combine all the Ingredients of muthiya in a bowl and mix them well.
2. Make a stiff dough with the help of water and then make a small balls or oval shape muthiya from the dough. Deep fry the muthiya into oil for 2-3 minutes and keep aside them.
To Make Undhiyu Masala
1. Collect all the Ingredients of Undhiyu masala and blend them well and make a rough paste then keep aside.
To Make Surti Undhiyu
1. Peel the yam, sweet potatoes and potatoes and cut them into big pieces.
2. Now, rub the chunky vegetables with oil and green masala paste and marinate for 20-25 minutes.
3. Then add 5 tablespoon oil into a deep frying pan and add surti papdi and green peas to them and mix them well.
4. Then add remaining green masala, salt and lemon juice to it and cook it for 4-5 minutes.
5. Now, add marinated vegetables to the mixture and add turmeric powder, ajwain and mix them well cover the pan and cook the vegetables at a LOW flame.
6. Then add fried muthiya and 1 cup of water to the vegetables. Let the mixture boil and simmer till the vegetables are cooked. Cook it for 20-25 minutes.
7. Surti Undhiyu is ready to serve. Enjoy this delicious Undhiyu with Phulka roti.
