Ingredients:

• 4 Egg whites, beaten stiff
• 8 tbsp – Rice power
• 1/2 tsp – Almond essence
• 2&1/2 cups – Almond powder
• 2&1/2 cups – ground Sugar
• 1.5 cups – whipped sweetened Cream

Method:

  1. Mix almond powder, rice powder and sugar.
  2. Put in essence.
  3. Gently mix egg whites and make a thick batter.
  4. Line a large baking tray with a greased greaseproof paper.
  5. Put small blobs of mixture on it and bake in a pre-heated oven for 15 to 20 mins. Remove.
  6. Cool and serve with whipped cream.
