Ingredients:

• 2 quarts – oil for frying
• 2.25 cups – all-purpose flour
• 1.5 tsp -baking powder
• 1/2 tsp – baking soda
• 1/2 tsp – ground Cinnamon
• 1/2 tsp – Nutmeg
• 1/4 tsp – ground Cloves
• 1/4 tsp – salt
• 1/2 cup – white Sugar
• 1/4 cup – firmly packed light Brown sugar
• 2 – eggs
• 2 tbsp – vegetable oil
• 1/4 cup – Milk
• 1 cup – unsweetened Apple sauce
• 1/2 tsp – vanilla extract

Method:

  1. Heat oil in deep-fryer to 375 degrees F (190 degrees C).
  2. Sift together flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt onto piece of waxed paper.
  3. In a large bowl, use an electric mixer at medium speed to beat together sugar, brown sugar and eggs until fluffy. Beat in 2 tbsps of oil.
  4. Stir flour mixture into egg mixture, alternately with milk, beginning and ending with dry ingredients, until well blended. Stir in apple sauce and vanilla.
  5. Carefully drop batter by level tbsps, 3 or 4 at a time, into hot oil. Do not overcrowd pan or oil may overflow.
  6. Fry, turning once with tongs, for 3 minutes or until golden.
  7. Transfer with tongs to paper towel to drain. Cool completely.
