Fresh curd raita with bundi
2 cups smooth curd
3/4 cup crisp boondi
1/2 teaspoon cumin powder
1/2 teaspoon sugar (optional)
Pinch of black pepper
1 teaspoon coriander chopped
Red chilli powder to taste
Salt to taste
1. Soak boondi in warm water for 2 minutes. Drain and keep aside.
2. Add salt, sugar and water in the curd and beat or whisk well.
3. Now mix boondi in curd and add all dry spices.
4. Sprinkle with chopped coriander and serve cold.
Advice – You can use the readymade variety of boondi available in the shops or make your own by mixing gram flour, salt and chili powder (optional) with a little water and passing the mixture through a special sieve directly into hot oil and frying till golden.
