Ingredients:

• 1/2 kg – small Brinjals
• 2 – onions, chopped
• 2 – tomatoes, chopped
• 3 – Potatoes boiled, cut into quarters
• 3 tbsp – Coconut paste
• 1 tsp – Garlic paste
• 1 tsp – Ginger paste
• 2 tsp – chilli powder
• 1 tsp – Garam Masala
• 1 tsp – coriander powder
• 1/2 tsp – Turmeric powder
• 3 tbsp – chopped Coriander leaves
• 3 tbsp – oil
• Salt to taste

Method:

  1. Cut each brinjal into 4 quarters in such a way that the quarters are still joined at the top. Wash and leave in a bowl of water.
  2. Heat oil in a pan and lightly fry the brinjals, keep aside.
  3. Add some more oil and saute the onions till golden brown.
  4. Then add ginger garlic paste and add chilli powder, garam masala, turmeric powder, coriander powder and fry for a minute with a little water.
  5. Add tomatoes and fry till soft.
  6. Finally add the fried brinjals and potatoes and stir well. Simmer on low heat for 3 or 4 minutes.
  7. Garnish with chopped coriander leaves.
  8. Serve hit.
