
Ingredients:
• 1/2 kg – small Brinjals
• 2 – onions, chopped
• 2 – tomatoes, chopped
• 3 – Potatoes boiled, cut into quarters
• 3 tbsp – Coconut paste
• 1 tsp – Garlic paste
• 1 tsp – Ginger paste
• 2 tsp – chilli powder
• 1 tsp – Garam Masala
• 1 tsp – coriander powder
• 1/2 tsp – Turmeric powder
• 3 tbsp – chopped Coriander leaves
• 3 tbsp – oil
• Salt to taste
Method:
- Cut each brinjal into 4 quarters in such a way that the quarters are still joined at the top. Wash and leave in a bowl of water.
- Heat oil in a pan and lightly fry the brinjals, keep aside.
- Add some more oil and saute the onions till golden brown.
- Then add ginger garlic paste and add chilli powder, garam masala, turmeric powder, coriander powder and fry for a minute with a little water.
- Add tomatoes and fry till soft.
- Finally add the fried brinjals and potatoes and stir well. Simmer on low heat for 3 or 4 minutes.
- Garnish with chopped coriander leaves.
- Serve hit.
