Ingredients:

• 3/4 cup – plain flour
• 3/4 cup – Almond meal
• 1.5 tsp – baking powder
• 80 ml – Butter milk or 2 small eggs
• A pinch – salt
• 200 ml – Milk
• 125 g – unsalted soft Butter
• 1.5 cups – powdered Sugar
• 2 tsp – Almond extract
• 1 tsp – vanilla extract

Method:

  1. Mix the plain flour and baking powder and sieve twice, add almond meal to this and mix well and set aside
  2. Add salt to buttermilk.
  3. Preheat the oven to 180 degree C, grease, the baking tray and flour it lightly
  4. Cream the sugar and butter until fluffy
  5. Add buttermilk, almond and vanilla extract.
  6. Add 1 cup of the flour mix and beat for thorough mixing
  7. Add the milk and remaining flour and mix thoroughly.
  8. Transfer this to the greased tray and bake exactly for 30 mins
  9. Skewer inserted does not come out clean for this cake, as it is slightly gooey in the centre.
  10. When cake is dark golden colour, remove from oven.
