Ingredients:

• 2 cups – grated Carrot
• 1 cup – chopped Dates
• 1 cup – chopped cashew
• 2 cups – Sugar (powdered)
• 3 – eggs, separated
• 2 cups – Maida
• 1.5 cups – refined oil
• 1 tsp – baking powder
• 1 tsp – soda bi-carbonate
• 1 tsp – vanilla.

Method:

  1. Preheat oven to 190 C.
  2. Sieve flour together with baking powder and soda.
  3. Mix and beat well the powdered sugar and oil. Add egg yolks and beat well.
  4. Add chopped dates, cashews and grated carrot.
  5. Add maida and mix well. Add cardamom powder.
  6. Beat egg whites stiff and fold into carrot mixture.
  7. Place in a greased cake tin and bake until done.
