Ingredients:

• 2 cups – Cauliflower florets (soak in salted warm water for 10 mins, rinse and drain)
• Spinach stalks – one inch length
• 3/4 cup – Onions
• Green chilli – 1
• 1 spring – Curry leaves
• Pinch each – cumin and mustard
• 1/2 tsp – Red Chilli powder
• A pinch – Turmeric
• Salt to taste
• Oil as needed
• Ginger-garlic paste – 1 tsp
• 1 tsp – Garam Masala powder

Method:

  1. Heat oil in a pan, splutter mustard, cumin and add green chillies and curry leaves.
  2. Add onions, sprinkle salt and fry till they turn golden brown.
  3. Add ginger garlic paste, fry for a min
  4. Add cauliflower, turmeric and salt and fry till the raw smell disappears for 2 to 3 mins
  5. Add spinach stalks, fry for another 2 to 3 mins or till the raw smell of the stalk disappear
  6. Add chilli powder, garam masala mix well and fry.
  7. Cover and cook on a low flame till the stalks and cauliflower is cooked. Keep stirring to prevent burning.
  8. Serve.
