Ingredients:

• 1 cup – boiled, cold Rice
• 1 stalk Curry leaves
• 2 green chillies, slit lengthwise
• 1 tsp – coriander, finely chopped
• 3-4 pinches of Turmeric powder
• 2 pinches of Asafoetida powder
• 1/4 tsp – Red Chilli powder
• 1/4 tsp – salt or to taste
• 2-3 pinches of sambar masala (optional)
• 1/2 tsp – Urad Dal
• 1/2 tsp – Chana dal
• 1/4 tsp – each cumin & Mustard Seeds
• 1/4 Lemon juice extracted
• 1 tbsp – oil

Method:

  1. Loosen rice in a plate till separated.
  2. Sprinkle all powdered masalas, except asafoetida, and salt over rice.
  3. Drizzle lemon juice over rice.
  4. Mix gently with both hands.
  5. Heat oil in a pan, add dals, then seeds, and allow them to splutter.
  6. Add curry leaves, green chillies, asafoetida, and mix.
  7. Add mixed rice and toss gently till well mixed and well heated.
  8. Transfer to serving bowl, and garnish with chopped coriander.
  9. Serve hot.
