
Ingredients:
• 1 cup – boiled, cold Rice
• 1 stalk Curry leaves
• 2 green chillies, slit lengthwise
• 1 tsp – coriander, finely chopped
• 3-4 pinches of Turmeric powder
• 2 pinches of Asafoetida powder
• 1/4 tsp – Red Chilli powder
• 1/4 tsp – salt or to taste
• 2-3 pinches of sambar masala (optional)
• 1/2 tsp – Urad Dal
• 1/2 tsp – Chana dal
• 1/4 tsp – each cumin & Mustard Seeds
• 1/4 Lemon juice extracted
• 1 tbsp – oil
Method:
- Loosen rice in a plate till separated.
- Sprinkle all powdered masalas, except asafoetida, and salt over rice.
- Drizzle lemon juice over rice.
- Mix gently with both hands.
- Heat oil in a pan, add dals, then seeds, and allow them to splutter.
- Add curry leaves, green chillies, asafoetida, and mix.
- Add mixed rice and toss gently till well mixed and well heated.
- Transfer to serving bowl, and garnish with chopped coriander.
- Serve hot.
