
Ingredients:
• 125 g – cheese, grated
• 100 g – breadcrumbs
• 2 – large Tomatoes (peeled and chopped)
• 1 tsp – prepared mustard
• 1 – Egg (beaten)
• a pinch – chilli powder
• salt and pepper to taste
• chopped Coriander leaves
• 1 tbsp – Butter
Method:
- Heat the butter, add tomatoes and cook for about 5 minutes.
- Add the cheese and breadcrumbs and mix well.
- Stir in the egg and blend well over gentle heat.
- Add the coriander leaves.
- Season with mustard, chilli powder, salt and pepper and coriander leaves.
- Cool and use as a sandwich spread or on toast.
