Ingredients:

• 250 g – prawns, peeled and deveined
• 250 g – potatoes, boiled, peeled and mashed
• 2 cups – oil for deep frying
• 2 tbsp – Cumin seeds
• 2 – sprigs Curry leaves
• 2 – onions, finely chopped
• 6 Cloves – garlic, chopped
• 2 inch – ginger, sliced
• 3 to 4 – green chillies, chopped
• 2 tbsp – Turmeric powder
• 4 – eggs, beaten
• breadcrumbs
• salt to taste

Method:

  1. Heat 4 tbsp oil in a pan.
  2. Add the cumin seeds and curry leaves.
  3. When they begin to crackle, add the chopped vegetables and deep fry till the onions turn a golden colour.
  4. Add the prawns and turmeric powder.
  5. Cook till the prawns are half done.
  6. Mix in the mashed potatoes and adjust seasoning.
  7. Divide the mixture into 60 g round cutlets.
  8. Dip in egg wash, dust with the breadcrumbs and deep fry till golden.
  9. Serve hot with green salad or tomato ketchup.
