Ingredients:
• 1.5 lb. boneless Chicken cut into 1″ pieces
• 3 to 4 tbsp cooking Oil
• 2 tbsp Soya Sauce
• 2 tsp Corn flour
• 1 cup Water
• 1 cup Green peas
• 6 to 7 spring [green] Onions cut into 1″ pieces
• 1/2 cup Cashewnuts
• 1 cup sliced Mushrooms
• Salt and Pepper [according to taste]
Method:
- Add soya sauce, corn flour and water in a bowl and mix thoroughly, set aside Heat 2 tbsp oil in a pan over medium heat and start stir frying the chicken pieces. Add sufficient salt and pepper according to your taste and cook till chicken is cooked
- Similarly stir fry green peas and spring onions and keep aside
- Stir fry mushrooms very carefully for a short period of time so the pieces remain intact
- Stir fry cashews and set aside
- So all the main ingredients are stir fried and looking great now pour the soy sauce mixture in a sufficiently roomy pan which will allow you to saute all the stir fried things without feeding it all to the stove, allow the mixture to thicken on medium heat
- Add green peas, spring onions and chicken and saute them well and carefully turn down the heat when required after a while add mushrooms, saute occasionally till the mixture runs dry
- Add cashew nuts and saute lightly
- Serve with toasted Bread and Butter and cooked Corn Kernels to make an whole some gourmet meal.
