Ingredients:

• 2 large Potatoes grated coarsely
• 3 Red Chillies finely chopped
• 1 tbsp – Coriander finely chopped
• 2 tbsp – Peanuts crushed not too fine
• 1/2 tsp – Cumin seeds
• 1/2 tsp – Sugar
• 1/2 Lemon juice extracted
• Salt to taste

Method:

  1. Heat oil, add potatoes, stir fry for 2-3 minutes.
  2. Take off fire, mix in all other ingredients.
  3. Return pan to stove.
  4. Stir and cook till potato is tender but not mushy to touch.
  5. Serve hot with coconut chutney or as is.
