Ingredients:
• 200 g – Cottage cheese / Paneer
• 1 – tomato, chopped
• 1 – onion, chopped
• 1/4 inch ginger, chopped
• 1 – Capsicum , cubed
• 1 – green chilli, chopped
• 1/2 tsp – Cumin seeds
• Spices:
• 1/4 tsp – Turmeric powder
• 1/2 tsp – coriander powder
• 1/2 tsp – Garam Masala
• 1 tsp – dry Mango powder/amchur powder
• Salt to taste
• 1 tbsp – Canola Oil
• Coriander leaves to garnish
• 8 – sandwich bread slices
• 1 tbsp – Butter
Method:
- In a pan, heat oil.
- Add onions and stir it till it becomes translucent.
- Saute onions.
- Add cumin seeds, ginger and green chilli.
- Saute for 1 minute.
- Stir and add capsicum.
- After a minute, add tomatoes.
- Stir it for two minutes.
- Add spices and salt, mix well.
- Finally add scrambled paneer and mix well.
- Cook for 2 minutes and remove from heat.
- Add coriander leaves and set aside.
- Paneer Bhurji:
- Butter the bread on one side and spread paneer mixture on it.
- Cover the slice with another buttered side of bread.
- Grill the sandwich and serve it hot with chutney or sauce.
