Ingredients:

• 200 g – Cottage cheese / Paneer
• 1 – tomato, chopped
• 1 – onion, chopped
• 1/4 inch ginger, chopped
• 1 – Capsicum , cubed
• 1 – green chilli, chopped
• 1/2 tsp – Cumin seeds
• Spices:
• 1/4 tsp – Turmeric powder
• 1/2 tsp – coriander powder
• 1/2 tsp – Garam Masala
• 1 tsp – dry Mango powder/amchur powder
• Salt to taste
• 1 tbsp – Canola Oil
• Coriander leaves to garnish
• 8 – sandwich bread slices
• 1 tbsp – Butter

Method:

  1. In a pan, heat oil.
  2. Add onions and stir it till it becomes translucent.
  3. Saute onions.
  4. Add cumin seeds, ginger and green chilli.
  5. Saute for 1 minute.
  6. Stir and add capsicum.
  7. After a minute, add tomatoes.
  8. Stir it for two minutes.
  9. Add spices and salt, mix well.
  10. Finally add scrambled paneer and mix well.
  11. Cook for 2 minutes and remove from heat.
  12. Add coriander leaves and set aside.
  13. Paneer Bhurji:
  14. Butter the bread on one side and spread paneer mixture on it.
  15. Cover the slice with another buttered side of bread.
  16. Grill the sandwich and serve it hot with chutney or sauce.
