Ingredients:

• 2 – spring onions, ends trimmed
• 4 tbsp – peas
• Salt to taste
• 1/2 tsp – pepper powder
• 100 g – red pumpkin, grated
• 2 – carrots, grated
• 100 g – cheese cubes
• 4 – eggs

Method:

  1. Pre-heat the oven to 180 C.
  2. Chop the spring onions and put them in a bowl.
  3. Add the peas to the bowl.
  4. Grate the red pumpkin and add it to the bowl.
  5. Grate the carrot and add it to the bowl.
  6. Crumble cheese cubes with hands and add to the bowl.
  7. Whisk eggs separately and add to the bowl.
  8. Add salt and pepper powder, and mix everything well.
  9. Coat a round oven-proof dish with oil. Pour out the ingredients into the dish.
  10. Place the dish in the oven for 30 mins or until the egg is set.
  11. Serve with toasted bread.
