Ingredients:

• 1 kg – minced Meat
• 2 eggs, lightly beaten
• 2 Cloves – garlic, crushed
• 1 medium size onion, chopped
• 1.25 cup – stale breadcrumbs
• 2 tbsps – Coriander leaves
• 1.5 tsp – grated Lemon rind
• salt to taste
• oil for frying
• For Tomato and Onion Salsa:
• 5 – red ripe tomatoes, diced
• 1/2 – onion, finely chopped
• 1/2 cup – Basil leaves, chopped
• 1 Clove – garlic, finely minced
• A pinch of pepper
• 1 tbsp – fresh Lemon juice
• 2 tbsps – Olive oil

Method:

  1. For Tomato and Onion Salsa:
  2. Place all the ingredients in a bowl, and mix well.
  3. Leave mixture at room temperature for 25 mins. before serving.
  4. Combine all the ingredients in bowl, except oil.
  5. Divide into 14 equal portions.
  6. Roll each portion of the mixture into a ball, then flatten slightly and shallow fry the patties in hot oil until brown in colour and done.
  7. Serve with a salsa of your choice.
