Ingredients:

• 2 cups – Pineapple juice.
• 1.5 kg – sponge cake.
• 1 tbsp – Lemon juice.
• 2 tsp – Corn flour.
• 1.5 cup – sugar.
• 2 Egg yolks.
• 2 tbsp – butter.
• 1 cup – whipped cream.
• 2 tbsp – grated chocolate.
• Pineapple rings.

Method:

  1. Cut cake into small cubes and place in a serving dish.
  2. Mix the juices with corn flour and sugar and cook until thick and boiling.
  3. Remove from heat, cool slightly and beat in egg yolks and butter.
  4. Pour mixture over cake.
  5. When absolutely cooled, decorate with cream and grated chocolate.
  6. Serve chilled.
