Ingredients:
• Thai fish sauce – 3 tbsp
• red lentils – 100 gm
• thick Coconut Milk – 1 cup
• Prawns – 250 gm, cleaned and chopped
• squid – 2, cleaned and sliced into rings
• Onion – 1
• Cloves – 3
• oriental chili paste – 2 tsp
• water – 3 cup
• For Oriental Chilli Paste:
• dry shrimp – 1 tbsp
• Dried red chillies – 5
• Shallots – 6 to 8
• Garlic – 5 flakessugar – 2 tsp
• thick Tamarind juice – 2 tsp
• oil – 5 tbsp
• salt to taste
Method:
- Combine lentils with water.
- Peel the onion and stick the cloves in it.
- Add it to the lentils.
- Simmer till lentils are soft and mushy.
- Lift out and discard the onion.
- Cool the lentils and blend till smooth.
- Combine chili paste with1/4 cup of coconut milk and cook in a non-stick pan till fragrant.
- Add the blended lentil, prawns and squid.
- Simmer till the sea food is cooked.
- Add fish sauce and remaining coconut milk.
- Simmer for 2 minutes.
- Serve hot.
- For Oriental Chilli Paste:
- Grind all the ingredients except oil and tamarind together to a paste.
- Heat oil and roast the paste over medium flame for about till the raw smell is lost.
- Add tamarind, mix well and remove.
