Ingredients:

• 10 Cardamom pods
• 1 inch stick Cinnamon
• 10 Cloves
• 3 Bay Leaf
• 1 tsp – oil
• 4 tsp – white sesame seeds
• 4 tsp – Coriander seeds
• 7 tsp – desiccated Coconut
• 10 black pepper
• 8 cassia buds

Method:

  1. Peel cardamom seeds.
  2. Saute the cloves, cinnamon, cardamom and bay leaves in the oil until the cloves swell.
  3. Dry roast the rest of ingredients over a low heat until the coconut is dark brown.
  4. Cool and grind with other fried spices to a nice powder.
  5. Store in an air tight container.
