 
            Ingredients:
  • 1 cup – grated Zucchini 
 • 1.5 cup – whisked Curd 
 • 1/4 cup – grated Coconut 
 • 1 tsp – Cumin seeds 
 • 2 – Green chillies 
 • A pinch – Turmeric powder 
 • 1/2 tsp – Mustard Seeds 
 • 1/2 tsp – Urad Dal 
 • 2 – dry Red Chillies 
 • A few sprigs – Curry leaves 
 • Oil as required 
 • Salt to taste 
Method:
- Heat enough oil in a microwave bowl for a few seconds, add mustard seeds, urad dal, curry leaves and dry red chillies, cook for 2-3 minutes on high.
- Meanwhile, grind grated coconut, cumin seeds and green chillies into a fine paste with enough water.
- Once the tempered spices turn brown, add grated zucchini and cook for 3 minutes on high (stir twice).
- Add the grounded paste, turmeric powder and salt to the cooked zucchini, stir once and cook for 5-7 minutes on high (stir in between).
- Add the whisked curd, give a stir and cook for 1-2 minutes. Serve with rice and spicy fried potatoes.
