Ingredients:
• 4 – eggs
• 2 cups – spinach, chopped fine
• 2 – large potatoes, boiled
• 1/2 cup – cheddar cheese
• 1/2 cup – Milk
• 1 tsp – black pepper
• 1 tbsp – Olive oil
• 1 tsp – mustard paste
• For Tomato sauce:
• 4-5 – large tomatoes, chopped
• 1/2 tsp – dried basil, oregano, Nutmeg
• 1 tsp – black pepper
• 1 tsp – salt
• 1 tbsp – Olive oil
Method:
- Mash the boiled potatoes and add salt and mustard paste.
- Pour in the milk and mash gently.
- Saute chopped spinach and keep aside.
- For the tomato sauce, heat olive oil in a pan and add chopped tomatoes and cook till soft.
- Add the herbs, spices and water and cook covered for 10-15 min.
- When this cools, grind into a fine paste.
- Grease a dish and spread the mashed potatoes evenly.
- Spread some cheese on top and then add sauteed spinach.
- Spread tomato sauce evenly over the spinach layer.
- Make four holes in the dish by swirling a fork or spoon.
- Pour in the eggs in these holes and sprinkle cheese on rest of the area.
- Immediately, place into the preheated oven at 180 degree C for 10-12 minutes.
- Cut the dish into squares and serve.
