Ingredients:

• 2 cups – basmati Rice
• 1 – big Onion (finely sliced)
• 1 tsp – Cumin seeds
• 3 – Cloves
• 1 piece – Cinnamon
• 3 – green Cardamoms
• 1 – black Cardamom
• 2-3 – Bay Leaves
• 1 tsp – Red Chilli powder
• 4 tbsp – oil
• 3.25 cups – water
• salt to taste

Method:

  1. Wash and soak the rice for 30 minutes.
  2. Heat oil in a degchi, add cumin seeds, cloves, cinnamon, cardamoms and bay leaves. Saute for a minute.
  3. Add the onion and fry on low flame until golden.
  4. Add red chilli powder and saute for a few seconds.
  5. Add the rice along with salt and water. Mix gently.
  6. Cook on high flame until the first boil and then simmer.
  7. Cook until the rice is done.
  8. Serve hot with mattar paneer, methi aloo, aloo gobi or yellow dal.
