Ingredients:
• 2 cups – basmati Rice
• 1 – big Onion (finely sliced)
• 1 tsp – Cumin seeds
• 3 – Cloves
• 1 piece – Cinnamon
• 3 – green Cardamoms
• 1 – black Cardamom
• 2-3 – Bay Leaves
• 1 tsp – Red Chilli powder
• 4 tbsp – oil
• 3.25 cups – water
• salt to taste
Method:
- Wash and soak the rice for 30 minutes.
- Heat oil in a degchi, add cumin seeds, cloves, cinnamon, cardamoms and bay leaves. Saute for a minute.
- Add the onion and fry on low flame until golden.
- Add red chilli powder and saute for a few seconds.
- Add the rice along with salt and water. Mix gently.
- Cook on high flame until the first boil and then simmer.
- Cook until the rice is done.
- Serve hot with mattar paneer, methi aloo, aloo gobi or yellow dal.
