Ingredients:
• Cashew nuts – 150 gm
• button Mushrooms – 200 gm
• oil – 3 tbsp
• Onion – 1 cup, chopped
• chili powder – 1 tsp
• coriander powder – ½ tsp
• Asafoetida – ½ tsp
• ready to use Tamarind pulp – 1 tsp
• salt to taste
Method:
- Soak cashew nuts for 4-6 hours.
- Add 1 cup of water and simmer till cooked.
- Meanwhile, cut mushrooms into quarters.
- Heat oil and fry onions till light brown.
- Add all the powders, fry for 30 seconds.
- Add mushrooms. Sprinkle with little salt.
- Cover and simmer for 5-7 minutes.
- Add tamarind pulp, cooked cashew nuts and salt.
- Simmer without covering till the gravy thickens and coats the mushrooms and cashew nuts.
- Place filling on chapatti or paratha, sprinkle with some chopped tomato and coriander leaves, roll up and serve.
