Ingredients:

• 1 cup – basmati Rice
• 4 cup – Milk
• 2 tbsp – Raisins
• 2 tbsp – walnuts, chopped
• 2 tbsp – almonds, peeled and chopped
• 1 tsp – vanilla essence
• 1 cup – Sugar
• 2 cup – fresh yogurt

Method:

  1. Wash the rice, add milk and cook till the rice is very soft and most of the milk is absorbed.
  2. Stir in the raisins, nuts and essence.
  3. Place the sugar in a thick bottomed pan. Sprinkle with 2-3 Tbsp of water.
  4. Place on a mode flame and cook without stirring till the sugar melts and turns a rich brown caramel.
  5. Remove from fire. Add ¼ cup of very hot water and stir to dissolve the caramel. It will be like a thick sauce.
  6. Add the caramel sauce to rice. Cool and place in refrigerator.
  7. Beat the yogurt till smooth and add to the chilled rice mixture. Serve chilled.
