
Ingredients:
• 1 – Beetroot
• 1 – small onion, chopped
• 1 – small tomato, chopped
• 1 – small potato, peeled and chopped
• 1 tsp – Sugar
• Salt to taste
• 1 tsp – ground pepper
• 1 tsp – chopped Mint leaves
• 1 tbsp – chopped coriander leaves.
Method:
- Peel, wash and cut the beetroot into large chunks.
- Pressure cook the beetroot, onion, tomato, mint and potato till soft.
- Cool and keep aside.
- When cold, blend in mixie or food processor and strain.
- Add salt and pepper.
- Garnish with coriander leaves.
- Server hot with dinner rolls.
