Ingredients:
• 1.5 cups- carrot, grated
• 1.5 litres – Milk
• 1/2 cup Cashew nut
• 1 cup- warm Milk for soaking Cashew nut
• 3/4 cup – Sugar
• 6- Cardamom powder
• 2 tbsp- Ghee
Method:
- Soak cashew nuts in 1 cup of warm milk for half an hour.
- Boil 1.5 litres of milk in a heavy bottomed vessel and keep stirring till it is reduced to half the quantity.
- Fry the grated carrot in ghee for a few minutes.
- Grind the fried carrot and soaked cashew nuts to a coarse paste. Add to the milk and add sugar and simmer till everything blends well.
- Finally, add the cardamom powder and serve chilled.
