
Ingredients:
• 175 g -caster Sugar
• 175 g- unsalted Butter
• 250 g -self raising flour
• 3 -medium eggs
• 1- lemon, finely grated zest
Method:
- Preheat oven at 180 C. Grease cake tin.
- Cream sugar and butter well.
- Add eggs one by one and cream well.
- Add flour cautiously.
- Mix well and carefully.
- Pour into cake tin and bake for 25 minutes.
- Cool before serving.
