Ingredients:

• 4 – Carrots
• 1 medium sized – onion, chopped fine
• 1 tbsp – Coconut
• To temper:
• 1 tsp – oil
• 1 tsp – Mustard Seeds
• 1/2 tsp – Urad Dal
• a few – Curry leaves
• 1 – green chilli, slit into half

Method:

  1. Wash carrots, peel and grate them. Keep aside.
  2. Heat oil in a kadai, add mustard seeds and let it splutter. Add urad dal and curry leaves, and fry for a min.
  3. Now add green chillies and saute for 2 mins.
  4. Now add onion and saute well till it turns soft.
  5. Add coconut and saute well till it turns light brown.
  6. Finally add carrot and mix it well, add salt.
  7. Saute till everything is mixed well and the raw smell of carrot is gone.
  8. Serve with sambar rice or any variety rice.
