Ingredients:

• 2 cups – thick yogurt
• 3 slices – bread (white or wheat)
• 1 to 2 – green chillies, thinly sliced
• Salt to taste
• 1/2 tsp – roasted cumin powder
• A few stalks of cilantro, chopped

Method:

  1. Slice the ends of the bread.
  2. Cut them into cubes to make the croutons.
  3. Spread them on a baking sheet and toast them in a 350 Fahrenheit oven for 5 to 10 mins until done.
  4. Meanwhile take the thick yogurt and place it in a bowl.
  5. Add the cumin powder, chillies, salt and cilantro. Beat it well.
  6. Just before serving the raita, add the croutons.
  7. Garnish with roasted cumin powder and chilli powder.
  8. Serve along with pulao or biryani.
