
Ingredients:
• 225 g – plain flour
• 125 g – Butter
• 90 g – rolled oats
• 175g – Brown sugar
• 75g – dates, chopped
• 1 -egg yolk
• 1 tsp -vanilla essence
• 1/2 tsp -bicarbonate of soda
• 1 – mashed Banana
• 1 tsp – finely grated Lemon rind
• For the topping: 4 – seedless Dates chopped
• 60 g – rolled oats
Method:
- Preheat the oven to 180 degree Celsius.
- Grease and line a baking tray with baking paper.
- Beat butter, rind, essence, egg yolk and sugar with an electric mixer or using a wooden spatula until it gets properly mixed.
- Stir in mashed banana, then sift the flour and soda, add oats dates and mix them together.
- The mixture will be quite sticky.
- Roll level teaspoon of the mixture into a ball.
- Roll each ball in the oats, flatten it slightly, place it on an oven tray leaving 5 cm gap between each cookie.
- Press a piece of chopped dates on top of each cookie.
- Bake it in the preheated oven for 15 minutes.
- Cool it on a tray.
- The cookies can be stored in a air tight container for up to 3 weeks.
