Ingredients:
• noodles for 2 persons
• 3-4 branches of Spinach
• 1 – medium sized Onion
• 2 – medium sized Tomatoes
• 1 cup – Cabbage, shredded
• 200 g – Tofu (soya bean Milk paneer)
• 100 g – Sprouts
• 5-6 tbsps – thick Soya Sauce
• 2 tbsps – Chilli Paste
• Salt to taste
• 4-5 tbsps – Oil
Method:
- Boil the noodles till tender (but not sticky) and keep it aside.
- Cut the spinach into 1 inch long pieces.
- Cut onion, cabbage and tomatoes into cubes.
- Cut the tofu into 1 inch slabs, deep fry and keep it aside.
- Heat 4-5 tbsp oil in a wide frying pan on a high flame. Add onions, fry till transparent, add cabbage and fry it for few seconds. Then add chilli paste.
- Add spinach, sprouts, tomatoes, fried tofu and salt. Fry for a minute and at last add the noodles and soya sauce.
- Keep frying for a minute and serve hot with cucumber slices and lemon juice.
