Ingredients:
• 8 fillets – Pomfrets
• 1 cup – Long grain Rice
• 2 cups – Shelled cooked shrimps
• 1/2 cup – Water
• Juice of 1 Lemon
• 1/2 cup – French dressing
• Salt, freshy ground pepper
• Curry Cream Sauce:
• 2 cups – Mayonnaise
• 1/4 cup – Salad oil
• 1 tbsp – Tomato ketchup
• 1 – onion, finely chopped
• 2 tbsp – Apricot jam
• A few sliced Olives
• 1 tbsp – Curry powder
• 6 slices – Garlic
• Salt, pepper and slices of Lemon
Method:
- Place fillets in a buttered dish, sprinkle with lemon juice, salt and pepper, pour water over it and poach in a moderate oven for 20 mins. allow to cool in the liquid and drain.
- Heat salad oil and fry onion and chopped garlic, add curry powder, seasonings, tomato ketchup and 1/2 cup water, simmer for 10 mins. stir in apricot jam and boil for 1 min, strain and cool.
- Mix in the mayonnaise.
- Boil rice and drain, stir in boiled shrimps, salt, pepper and French dressing, spread rice on a flat, serving dish, arrange fish fillets on top of it, and pour curry sauce over it all.
- Serve cold garnished with olives and lemon slices.
