
Ingredients:
• 1-2 – florets of Broccoli
• 1/2 cup – frozen or fresh sweet Corn
• 1 tbsp – Olive oil
• Juice of half a Lemon
• Salt and pepper
Method:
- If using frozen sweet corn, thaw in boiling water.
- Cut up broccoli florets into bite-sized pieces, leaving just a little stem.
- Steam the florets till tender.
- Place all the ingredients in a bowl.
- Add lemon juice, olive oil, salt, and pepper.
- Toss well and serve.
