Ingredients:

• 2.5 cups green peas, shelled
• 2 eggs, beaten stiffly
• 2 tbsp – grated Onion
• 2 tbsp – melted Butter
• 1 tbsp – chopped Parsley
• 2 tbsp – finely chopped Mint leaves
• A few drops of red pepper sauce
• Salt, pepper and mustard to taste

Method:

  1. Boil the green peas till tender, drain and liquidize.
  2. Add the beaten egg yolks, grated onion, melted butter, chopped parsley, finely chopped mint leaves, drops of red pepper sauce, salt, pepper and mustard to taste.
  3. Fold in the egg whites, stiffly beaten.
  4. Pour into a greased ring mould
  5. Bake at 180 deg C for about 25 mins. Till firm. Turn out after 5 mins.
  6. Serve with creamed mushrooms.
