
Ingredients:
• 1 – Brinjal
• 2 tbsp – Olive oil
• 2 tbsp – tahini (sesame seeds paste in Olive oil, available at health food stores)
• 2 tsp – fresh Garlic paste
• 2 tbsp – fresh Lemon juice
• Salt and pepper for seasoning.
Method:
- Brush brinjal lightly with oil and roast on flame to give it a barbeque flavour.
- Peel the skin off, chop and cook brinjal.
- Add all the other ingredients including oil and quickly whip, in blender.
- Season well with salt and pepper and chill in refrigerator.
- Garnish with a pinch of red paprika or red chilli powder and mint sprig.
