Ingredients:

• 1 – Brinjal
• 2 tbsp – Olive oil
• 2 tbsp – tahini (sesame seeds paste in Olive oil, available at health food stores)
• 2 tsp – fresh Garlic paste
• 2 tbsp – fresh Lemon juice
• Salt and pepper for seasoning.

Method:

  1. Brush brinjal lightly with oil and roast on flame to give it a barbeque flavour.
  2. Peel the skin off, chop and cook brinjal.
  3. Add all the other ingredients including oil and quickly whip, in blender.
  4. Season well with salt and pepper and chill in refrigerator.
  5. Garnish with a pinch of red paprika or red chilli powder and mint sprig.
