Ingredients:
• 4 – potatoes, peeled and chopped into quarters
• 2 – slit Green chillies
• 2 tsp – pepper powder
• 1 tsp – cumin powder
• 1/2 tsp – coriander powder
• 1 tsp – crushed Garlic
• 2 – big onions, sliced
• 2 tbsp – Coconut paste or 1 cup Coconut Milk
• salt to taste
Method:
- Boil the potatoes and all the ingredients with 5 cups of water in a large vessel on high heat for about 15 minutes.
- Lower the heat and simmer for at least one hour till the potatoes are very soft and the soup is nice and thick.
- Garnish with chopped mint leaves and serve hot with fried bread or toast.
