Ingredients:

• 250 g – Chicken mince
• 150 g – Potato
• 1/2 cup – shallots, thinly sliced
• 2 eggs
• 1 tbsp – celery, chopped
• 1/2 cup – spring onion, chopped
• salt and pepper to taste
• oil to deep fry

Method:

  1. Boil, peel and mash the potato.
  2. Deep fry shallots till brown and crisp. Drain and reserve.
  3. Heat 2 Tbsp of oil, fry celery, spring onion and chicken till dry.
  4. Cool slightly and add fried shallots salt and pepper.
  5. Beat one egg lightly and mix into the chicken mixture.
  6. Divide the mixture into 8 parts and shape into patties.
  7. Beat the other egg lightly.
  8. Dip the patties in the egg and deep fry till golden brown.
  9. Drain on kitchen paper and serve hot with chili sauce.
