Ingredients:
• 500 g – Paneer (cottage cheese) cubes
• Cornmeal (yellow Maize flour)
• 2-3 tbsp – oil
• Salt to taste
• 1/4 tsp – freshly ground black pepper
• 1/4 cup – finely chopped Spring onions
• 1 – Clove garlic, minced
• 1/4 tsp – cumin powder
• 1/4 tsp – coriander powder
• a pinch of Nutmeg powder
• 1/4 cup -red Vinegar
• 1/4 cup -vegetable stock or water
• 1 tsp – Red Chilli powder
• 2 tbsp – blanched slivered Almonds
• 2 tbsp – green olives, washed, drained and sliced
• A few sprigs of fresh coriander
Method:
- Roll the paneer pieces in cornmeal. Make sure to coat them completely.
- Fry the paneer pieces in hot oil, sprinkle salt and pepper on the pieces as they cook.
- When the paneer pieces are well browned, add onion, garlic, cumin, coriander powder and nutmeg.
- Add vinegar and stock/water.
- Cover and simmer for 5-10 minutes.
- Add chilli powder and simmer for a few more minutes.
- Add the almonds and olives.
- Season with salt and pepper.
- Garnish with coriander leaves. Serve hot.
