
Ingredients:
• 1 – grated Coconut
• 3-4 tsp – Coconut oil
• 3 – Green chillies chopped fine
• 1 – small piece of Ginger chopped fine
• 1 tsp – urad dhal
• 1 tsp – Channa dhal
• 1 tsp – Mustard Seeds
• 1 tsp – Ghee
• 2 tbsp – Cashew nuts
• 1 sprig – Curry leaves
• Salt to taste
• 2.5 cup – basmati Rice
• 5 cup – water
• Chopped coriander – for garnish
Method:
- Cook the rice in 5 cup of water and set aside
- Heat 1 tsp of coconut oil in the sauce pan and add grated coconut
- Fry for 3-4 minutes till coconut becomes dry. Take it out and keep aside.
- Add remaining coconut oil and mustard seeds.
- Once the mustard seeds splutter, add urad dhal, channa dhal, green chillies, ginger and curry leaves.
- Fry till the dal becomes brown. Remove it and keep aside.
- Add some ghee in the pan and fry the cashewnuts till golden brown.
- Take a bowl and add cooked rice, salt to taste, coconut, tempering and mix them well.
- Top with cashewnuts and coriander
- Serve hot
